Pamper Yourself: Two-Minute Chocolate Cake

When December rolls around, and the evenings are dark and cold and you’re all piled under quilts with fuzzy socks on, you want a little something decadent and warm. This is your decadent alternative to hot chocolate. Fluffy chocolate cake with molten core can be yours in less than a few minutes. It is downright sinful, and it’s so rich I couldn’t even make it through the entire mug.

That it’s vegan is a special side bonus. This is the least veganish tasting dish you’ve ever eaten.

 

Vegan Two-Minute Chocolate Cake

In a coffee mug, mix —

1/4 cup flour

2 tbsp cocoa powder (I used Ghirardelli)

1/4 tsp baking powder

2 tbsp sugar

1/8 tsp salt

— until thoroughly blended.

Then, add —

2 tsp oil

1/4 cup + 2 tbsp milk (I used rice milk)

1 tsp vanilla

— until it’s a smooth batter.

Pop it in the microwave for 1 minute and 30 seconds.

Top with treats of your choice. I went with pistachios and sea salt. I could also see a dollop of peanut butter or nutella working. Or, a sprinkle from a smashed candy cane.
