Trinidad Doubles Pizza

Pizza is an insanely convenient and healthy food that’s gotten a bad rap. It is really just a massive bruschetta, and everyone loves bruschetta. You need a bread, some type of creamed base layer, with vegetables and other toppings. That’s pizza.

Back when I lived in New York, I used to spend Saturday mornings at A & A Bake and Doubles in Bed Stuy to get Trini Doubles: a pocket of elastic dough with smokey chickpea curry, mango, and hot sauce. Basically the most delicious thing you’ve ever eaten.

Well, why not make that into a pizza?

This is one of our most mouth-watering weekly meals, and one of Bean’s favorites too. Using canned beans and frozen mango, it’s also one of those things you can have around your pantry for a last-minute dinner. It’s easy, simple, and disappears fast.

 

Trinidad Doubles Pizza

 

Chickpea Curry

2 14oz cans of chickpeas (don’t drain)

1 onion

2 cloves garlic, minced

1 tbsp vegetable oil (for cooking)

1 tsp Trinidadian Curry Powder

1 tsp cumin

1 tsp garam masala

salt & pepper to taste

1 cup mango, cut into chunks/slices (I use half a bag of frozen mango.)

Pizza dough (from Safeway or Whole Foods or make your own)

Your favorite hot sauce

Heat oven to 450 degrees. Grease your baking sheet.

In a saucepan, heat a tablespoon of oil and sauté onions. When onions are translucent, add trini curry powder, cumin, and garam masala. Mix for a minute or so, then add cans of chickpeas. Boil on medium heat until chickpeas are softened, about 15 minutes.

In the meantime, roll out your pizza dough to the size of your baking sheet. Transfer dough onto baking sheet. It may retract from the edges a bit, that’s ok. You can stretch it back out when you add the chickpea curry.

Once the curry is ready, taste and add salt and pepper. If you used an organic brand of chickpeas, you may need to add even more salt for the flavors to come out. You may want to add more curry powder too, if it’s not spicy enough for you.

Pour the chickpea curry onto the pizza dough, going right to the edge. Top with mango chunks.

Bake in the oven for 10-15 minutes. Edges should be golden, bottom should be browned.

Before eating, sprinkle with hot sauce.
