What’s your trick for getting fresh herbs to last a little longer?

Buying fresh herbs drives me insane. I end up using 1 teaspoon for the recipe, and then throw out the rest. (Or even worse, put them in the fridge, vowing to use them again within a couple days, and then having to fumigate the place after a week.) It seems like such a waste. But, with Thanksgiving cooking rearing its head, I want to splurge a little for the fresh stuff.

So far, I’ve figured out that putting the herbs in a glass of water in the refrigerator keeps them fresh for a week or so.

What’s your method?

  1. Tupperware has a “FridgeSmart” collection that actually works — it controls humidity based on the type of produce (with as handy chart on the side of the containers) and I swear I can keep cilantro, asparagus, broccoli and spinach for about two weeks.
